Merckens Compound Coatings have become a favorite among home
candymakers. Their low melting temperature makes them easy to
handle so you can create delicious homemade candies with a
professional look. Instead of chocolate liquor and cocoa
butter like real chocolate, the compound coatings are
specially formulated using cocoa powder and vegetable oil.
This allows them to be easily melted and used without
tempering and adding other ingredients. The versatility of
the coatings makes them an easy and economical alternative to
use for dipping items, garnishing desserts, molding candies
and baking.
Available in a rainbow of colors, Merckens Compound Coatings
allow you to mix and match to find just the color you need.
White and colored coating wafers have a vanilla flavor; milk
has a rich cocoa flavor; and dark a semi-sweet cocoa flavor.
How to melt:
Due to its low working temperature, melting Merckens Compound
Coating wafers is quick and easy. DOUBLE BOILER METHOD –
Heat, not boil, the water in the bottom pan. You should be
able to touch the water without burning your hand. Place
wafers in the top pan and stir frequently until melted. Be
careful not to let any water or steam come in contact with the
wafers. MICROWAVE METHOD – Place wafers in a microwave-safe
container and melt on medium (or defrost) setting for 1 minute
at a time. Stir after each minute. Repeat until melted.
Plastic containers are recommended since glass will hold the
heat and can get too hot.
Storage:
Store Merckens Compound Coatings in a cool, dry, and odorless
environment. DO NOT place in refrigerator or freezer because
condensation will develop when removed. This will add water
to the coatings and they will become thick when melted.
