Q. How long has Lorraine's, Inc. been in business.
A. We have been in business in the same location in Hanover, MA since 1977.

Q. How did you get your start?
A. Lorraine's was started 24 years ago as a hobby for Lorraine and Jim Frisbee but it quickly became a full-time job. Lorraine Frisbee has been decorating cakes for 28 years.

Q. I found the Australian pans to be really unique. Do you carry more in your store.
A. Yes, we are the exclusive US dealer for these handmade pans. Our entire collection is available here on our site, but we have well over 8,000 additional products in our store as well as a teaching facility.

Q. You have mentioned a teaching facility. When are classes held?
A. Our curriculum is always changing in response to our students interests and new techniques and tools. Call us at 781-826-2877 or email us for our latest class schedule.

Q. How long has LorraineCakeSupply.com been online?
A. We just launched our web site in June of 2001. We are very excited about serving our existing customers needs as well as filling the baking needs of new customers nation-wide.

Q. Why did you develop a web site?
A. Many of our customers come from far and wide and love the fact that they can find anything in our stock. When we discussed the prospect of on-line ordering they were very interested in being able to re-order and see new items from their home or office.

Q. Does your online catalog carry every item you stock?
A. No way. We have over 8,000 items available in our store in Hanover. The site will never cover it all but we will be adding more and more all the time. Next up are candy making supplies. Meanwhile if you don't find it on our site just contact us, we probably have what you are looking for.

Q. Can you handle online ordering correctly? Is the shopping cart secure? 
A. Absolutely, we have been shipping nation-wide all along. Many of our customers we have never even met. As far as the online aspect, our site manager MediaRight Technologies helps us manage the day-to-day operations of our site.

About Cake Decorating 

Q. I enjoy making my own candy and have been using your products for years. One thing though, my chocolate coating oftens comes out too thick to work with easily. Any suggestions?
A. Try using Paramount crystals which are a solid form of Palm Kernel Oil. Use a few flakes at a time until the candy is thinned. It works quite well but remember to keep the heat very, very low as confectionery candy will thicken when too warm.

Q. I am trying to achieve a candlelight tone effect that I saw on one of your cakes. What color is that?
A. To achieve a candlelight tone (off-white with a golden glow) you can use antique white coloring and add a very tiny amount of lemon yellow.

Q. I am creating a large cake for my son's class party and would like to create designs with a theme but am lost for ideas on how to do this. Any ideas?
A. Yes, try using any cookie cutter (there are hundreds of available designs - you may have some already). Use the cutter to make an impression on the cake. Outline the impression with a #2 or #3 tip, then fill it in with a #16 star tip. It comes out great every time!
